Vegetarian dishes

This elegant and fruity Pinot Noir from Andrey’s from Ligerz is an excellent accompaniment to vegetarian dishes. It is vinified only from selected sites and then aged for six months in large wooden barrels. The result is a very subtle woody note, which combines the impressive round character with the strong raspberry touch. For dishes that consist mainly of vegetables, we recommend a white wine – ask our local sommelier.

The fish

Bright and shiny red. Intense and full taste of raspberries, ripe cherries and a light note of cassis. The Châtenay Cuvée Réservée from the Caves Châtenay-Bouvier SA vineyard in Boudry goes very well with fish in a distinctive sauce.

The venison

Venison is best served with strong wines. A classic choice to do justice to the strong aroma of venison is Châteauneuf-du-Pape. Made from the Grenache Noir, Syrah, Mourvèdre, Cinsault and Clairette grape varieties, this wine impresses with a finely nuanced spectrum of aromas.

The meat

The Lejeune wines of owner François de Pommerol and his son-in-law Aubert Lefas prove how sweet, finely refined and filigree Pommard can be. The natural organic cultivation and fermentation of the whole grape make a significant contribution to the house’s winemaking philosophy. In combination with an Entrecôte, we recommend Pommard Les Argillières 1er Cru.
